Can Passover and Diabetes mix?

With Passover only a couple weeks away, it is time to start planning ahead for some difficult times for managing diabetes...elevated blood sugars, more calories, high carb food choices, and a different eating schedule for at least the first two nights of the celebration (The Seder). My description of what "could" happen with your diabetes management does not have to happen that way. Today as I perused the kosher for passover aisles I did some label reading trying to think of the best bets for keeping my blood sugars under good control over this very different eating holiday of eight days. Since so many of the baked, cooked, and pre packaged items are so high in carbohydrates, I plan to add more raw vegetables and add more volume to my meal by adding a broth based soup. Today I found an onion soul with only 3 grams of carbohydrate that is kosher for passover. Besides adding more volume to my meals with raw veggies and broth soups I also plan on keeping up with my exercise regimen.
