Baked Acorn Squash

Hard-shell "winter" squashes are delicious, and are different from summer squashes like zucchini in one key diabetes-related way. Winter squashes are considered a starchy vegetable, which means containing enough carbohydrate to count. But, when compared to potatoes, corn or peas these tasty pumpkin cousins have a pretty generous portion size- one full cup is equal to one carb choice (15 grams carbohydrate).
