Roasted Carrots with Rosemary

Too many give up on eating healthy because they somehow think it means never enjoying food again (often a self-fulfilling prophesy because of the "healthy" foods they choose). Today's recipe blows up that idea.

Here's the incredibly simple ingredients for this recipe:

  • 1 pound baby carrots, washed

  • 1 tbsp olive oil

  • 1 tbsp fresh rosemary or 1 TSP dried rosemary

  • 1/2 tsp pepper preparation

Here’s how to make it:

  • preheat your oven to 450 degrees Fahrenheit

  • place all the ingredients in a bowl and toss around to coat evenly in oil

  • arrange the carrots in a roasting pan and roast for 20 to 30 minutes or until brown

    Now look what we have - an incredibly healthy, low carbohydrate vegetable dish from a recipe a child could put together and it costs you about one half hour of waiting time compared to just sticking frozen food in a microwave. The most important thing is that you now have a dish that clearly doesn't fit with the view that healthy eating must be miserable to be effective.

    The recipe makes 4 servings and each serving is 70 calories, 10 grams carbohydrates, 3 grams fiber, 4 grams of healthy fat, less than one gram protein, and only 89 milligrams sodium.
