Strawberry Salad

Our featured recipe in this week's EveryDay Menu gives us a preview of the soon-to-be-published book The Plant Powered Diet by fellow Registered Dietitian Sharon Palmer (published 2012 by The Experiment). Strawberry Salad is a perfect compliment to an evening meal that features one of our favorite main dishes, Stuffed Red Bell peppers. Ripe strawberries, a touch of orange juice with Brazil nuts as a topping shows once again how my talented friends can liven up any meal.
